Saigon Cinnamon is a spicy, sweet and strong cinnamon. It has the strongest smell, the spiciest taste and highest level of essential oil amongst all the different species of Cinnamon. It has a ~5% essential oil content, greater than Korintje, Cassia or Ceylon. The high oil content is what sets this cinnamon apart from the rest.
