Very few ham makers take the time to double smoke their hams. It takes an extra step, but a step we're willing to take. While others err on the side of over-smoking, we've taken extra measures to ensure that the extra smoking time only means more flavor, never drying out. After we tried several wood chip varieties, we knew that pecanwood was the perfect woodchip to give this ham the depth of flavor we were looking for.All CUREMASTER RESERVE; Hams are hand trimmed and range from 8-10 pounds, containing approximately 12-14 servings.
