Together, this combination of metals ensures optimal strength, durability, and a sharp, lasting edge. Then, we anchor the blade in a specially-designed handle that reinforces proper technique and balances the heft of the knife.

PRODUCT DETAILS 8-inch multipurpose Chef Knife with a blade handcrafted from 3-Ply Clad stainless steel (9CR18 HRC 60-62). Durable 9Cr18MoV (440 C) steel core is sharpened to a cutting edge measuring 15 degrees per side (an optimal angle for sharpness and edge retention) and wrapped in a 430 stainless steel body. POM handle is designed to reinforce correct grip, and steel tang extends the full length of the handle to secure and counterbalance the blade. Knife design blends Japanese and German styles for optimal precision and comfort. Half-bolster cushions fingers. We recommend handwashing with soap and water.
